Summer veggies are a favorite of mine. I usually can't get enough of summer squash and zucchini. For a fast and easy dinner I'll saute them and add some seasoning from those 4-way season jars that you're supposed to use for dipping oils. Then I'll cook up some healthy pasta and drizzle it with olive oil and the same seasoning and some Parmesan cheese. When it's time to toss it all together I'll add in some cut up sun dried tomatoes. If the grill is on, I'll grill up some chicken Italian sausage and cut them up and toss them in as well.
